Aah…the glamorous life of a restaurateur. Er, not exactly.
Operating a restaurant is no piece of cake. And opening one is a production in itself. Still think you want to get into the biz?
We spoke with the owners of two brand new but very different restaurants: Brent Stein of Take A Bao in Century City, a fast casual spot specializing in modern interpretations of Chinese bao, and former Four Seasons chef Conny Andersson of AK Restaurant + Bar, a world bistro in Venice.
Conceptualize
First you need to come up with a concept. It can be mainstream or edgy, casual or high end. But if you’re not passionate about it, don’t expect anyone else to be.
